Couscous Salad with Orange Macaroons

A cold salad of couscous, sweet, fruity and refreshing. You can easily customize your recipe by adding other dried fruits such as grapes or blueberries. I added 1 / 4 cup slivered almonds to the salad for extra crunch and protein addition. The salad is tastier the next day. I therefore strongly advised to prepare the night before.

Couscous 1 cup orange juice 1 cup water

1 tsp tablespoons olive oil Salt and pepper

2 cups couscous

Dressing 1 / 3 cup olive oil
1 / 4 cup white wine vinegar
The zest 1 / 2 Orange Salt and pepper

1 / 2 cup dried cranberries 2 oranges
, peeled and cut into sections, with juice 2 cups
seeded cucumber, diced
1 / 4 cup fresh chives, chopped 1 tablespoon
chopped fresh tarragon, chopped
( 1 / 4 cup slivered almonds optional)
. Preparation

Couscous

In a saucepan, boil the orange juice, water and olive oil. Add salt and pepper. Remove from heat and add couscous. Stir, cover and let stand 5 minutes. Discard the seeds using a fork. Let cool. Cover and refrigerate until cool completely.

Dressing In a bowl, combine all ingredients. Add salt and pepper. Book.

In a large bowl, combine couscous, salad dressing and remaining ingredients. Adjust seasoning.
