Ha ... leftover cooked chicken ... What to do with it? I often ask this question. Today I thought about the Quesadillas. A simple recipe, quick and delicious. It's so simple that you'll have no remorse to enjoy your Quesadillas watching TV with a beer. For those who do not know what the Quesadillas, it is simply a tortilla topped with spicy chicken mixture and cheese box. It closes the tortilla in half and we blew in an oiled frying pan. I used the recipe from Ricardo but since I'm not a great lover of mushrooms, I omitted this ingredient.

Quesadillas:

1 1 / 2 cup chopped green onions 6 tbsp
tablespoon vegetable oil 1 red pepper
grilled
chopped 2 cups cooked chicken, chopped 1 cup salsa
Trade soft or strong
8 tortillas 20 cm (8'')
2 cups grated Monterey Jack cheese Salt and pepper

Sour cream, for garnish Salsa
extra for garnish Cilantro or parsley chopped
for presentation

In a skillet, brown the onions in 2 tablespoons tablespoons oil. Add salt and pepper. Pour into a bowl and let cool. Add pepper, Chicken and salsa. Adjust seasoning. Book.

Spread the tortillas on a work plan. Place 1 / 4 cup cheese on half of each tortilla. Divide the vegetable mixture and chicken over the cheese and tortillas closed. Press lightly.

In two large nonstick skillet, brown 4 quesadillas at a time about 3 minutes on each side over low heat in 15 ml (1 tbsp) oil.

Serve with sour cream, salsa and cilantro.
